Andalucian Rice

Andalucian rice is a lovely simple rice dish with Mediterranean vegetables. Serve in small portions as a tapa or as a side to chicken or fish.



You will need:

1 cup rice per person
Garden peas (fresh are best)
Small tin sweet corn
Small red pepper finely chopped
Olive oil


  • Cook the rice according to the instructions
  • When cooked, leave the rice to cool
  • Mix the pepper, peas and sweet corn with the cooled rice
  • Season with salt and add a small drizzle of olive oil

You can add a variety of other vegetables such as spring onion, green pepper or cucumber.
